120 gr butter at room temperature75 gr brown sugar75 gr egg white egg teaspoon vanilla extract180 gr white flour ½ teaspoon baking soda150 gr dark chocolate ¼ teaspoon salt for dough ½ teaspoon salt for topping (I used Maldon salt flakes) PREPARATION Preheat the oven to 180 degrees (heat up and down). Chop the chocolate with a knife. Mix the butter with the white sugar and brown sugar with a mixer for 5 minutes, until you get a glossy cream. Add the vanilla and the egg and mix again. 20 seconds. Add flour mixed with baking soda, ¼ teaspoon of salt and chocolate. Keep a few larger pieces of chocolate to place on top of the biscuits. Gently mix the dough with a spatula until smooth. Portion the dough with an ice cream spoon or a normal spoon. Place the dough balls on a baking sheet. Place 2-3 pieces of chocolate and a few flakes of salt on each dough ball. Put the tray in the oven and bake the biscuits for 10-12 minutes, until lightly browned. It should have hardened edges, but still be soft in the middle.
